Recipe: Grilled Baby Gem, Feta, Pomegranate, Roasted Nut Dressing

Summer dining should be simple; we want to be spending our time outdoors absorbing vitamin D and filling our lungs with fresh air! Since the new summer menu launched at Grace the Grilled Baby Gem, Feta and Pomegranate Salad has quickly become a firm favourite; filled with a rainbow of fresh ingredients and complimentary flavours it’s a quick and delicious dinner choice, filled with nutritional benefits.

THREE REASONS WHY WE LOVE IT

Baby Gem Lettuce… sweet, crisp and compact. It’s a great source of  vitamin A, B1, B2 and C, folate, manganese and chromium, as well as providing dietary fibre and the minerals potassium, molybdenum, iron, and phosphorus.

Pomegranate… sweet, juicy jewels and innumerable health benefits. Pomegranate is thought to be effective against heart disease, high blood pressure, inflammation and some cancers. It’s a good source of fibre and filled with vitamins A, C and E, iron and antioxidants.

Head Chef Marcin’s Roasted Nut Dressing… can be made in larger quantities, and stored in a sterilised bottle, so you can add to anything. It goes particularly well with kale and quinoa dishes.

INGREDIENTS

  • 1 x Grilled Baby Gem
  • 2 tbsp Nuts Dressing
  • 2 tbsp Pomegranate seeds
  • 40g Feta Cheese
  • Cress
  • Salt and Pepper to season

Roasted Nut Dressing (500ml)

  • 500g Hazelnuts
  • 200ml Balsamic Vinegar
  • 150ml Maple syrup
  • 150ml Olive oil
  • Salt and Pepper to season

For the salad:

Slice the baby gems in half and place under a moderate grill for 5-8 minutes, keeping a close eye to ensure the outer leave don’t burn.

Add crumbled feta cheese and cress before seasoning. Top with pomegranate seeds and couple of tablespoons of roasted nut dressing.

For the dressing;

Roast the hazelnuts on baking parchment at 180c, until golden brown (15-20 minutes).

Once cooled, roughly crush then add the rest of the ingredients and mix well, before decanting into a sterilised bottle or jar. Shake well before use.
